I want to take some plywood and put a temporary shelf inside for dry food above our coolers

Usually the bear boxes get very very hot due to their location in the direct sun light. If your looking at just storing all the dry goods together or to keep them out of the ice chest so they don't get soggy? I would just recommend keeping them in a cardboard box and then you could just dispose of the cardboard box when you leave. I usually take two small plastic tote bins for storing dry goods. This way i am able to keep them together when they are in the car and they dont get crushed either.

We wouldn't have room in bear box for all ice chests and boxes like you are talking about plus we put a ez-up over the box to keep the sun off ...

AN EZ-UP or any other shelter is always a good idea over the bear box and table, it also creates an area to gather under a rain storm and talk story or play board games till the rain passes. But I agree with Marine 1 put your dry goods and perishables in totes and store them in the car.

It worked out great. I was able to keep dry goods above the ice chest and still pull out and access  ice chest.......
